Ingredients:
250g Plain Flour
1/2tsp Bicarbonate Soda
1/2tsp Salt
100g Caster Sugar
200g Dark Brown Sugar
1 Egg
1 Egg Yolk
1 Tablespoon of Vanilla Extract
1tsp of Coconut Oil
170g Unsalted Butter
300g Chocolate Chips
2tbsp Cadbury Chocolate Spread
Method:
First Pre-Heat the oven to 170 C/ Gas Mark 3 and prepare the baking sheets with some greaseproof paper. Then sift together the Plain Flour, Salt and Baking Powder in a large bowl and set aside. Then in a separate bowl, melt the butter (Which I tend to do in the microwave in 40 second intervals) or you can even put it over a pan of simmering water. After the butter has melted, you can then whisk this with the caster and dark brown sugar.
Then once the mixture is kind of smooth you can whisk in the egg and the egg yolk with the vanilla extract and coconut oil until everything is thoroughly mixed together in a smooth mixture.
With both your wet and your dry ingredients, take the dry mixture and combine it with the wet mixture using a spatula.
After this divide the dough into two separate mixtures, in one mixture add chocolate chips and 2tbsp of cadbury chocolate spread and in the other mixture add white chocolate chips.
Then you can bake the cookies for 15-17 minutes till the tops are a golden brown, but still soft when you touch the surface. Ovens can actually vary so they could need longer of they could need less time, which is why you have to keep a close eye on them as there is a very small window between overcooking and burning. Once the cookies are done and you've given it at least 5 to 10 minutes of cooking time you can transfer them on a cooling rack to cool completely.
